Healthy-ish Heart Shaped Oreos
I love the idea of Oreos, but not how sugar filled and unhealthy they are, so I came up with my own healthier version.

what you need
For the cookies
300 g rolled oats
1/2 cup coconut sugar
2 tablespoons sunflower seeds
1/4 cup raisins
1 teaspoon vanilla powder
Pinch of salt
3 tablespoons raw cacao
3 tablespoons cacao nibs
3 tablespoons pistachios
1 tablespoon crunchy peanut butter
1 flax egg
125 g vegan butter
For the filling
1 cup powdered sugar
1/4 teaspoon vanilla powder
1-2 tablespoons coconut cream
what to do
Preheat oven to 160 fan forced. Line a cookie tray with baking paper.
Place the oats, sugar, sun flower seeds, salt, vanilla powder and raisins in a food processor and pulse until a flour forms. Then add the cacao, nibs and pistachios and pulse a few times, then add the peanut butter, butter and the flax egg and pulse again until combined. Roll out cookie dough between two sheets of baking paper to a thickness of about 5mm and use a heart shaped cookie cutter to press out your cookies.
Bake for 15 minutes. Allow to cool before forming your cookies.
To make the filling simply stir all ingredients together in a bowl until well combined. The mixture should be quite firm, but still spreadable.
