Oat, Currant and Chia Cookies
They say it's hard to be sad when eating a cookie, and I have to agree. These little morsels are sure to put a smile of your face.

what you need
300 g quick oats
1/2 cup coconut sugar
2 tablespoons chia seeds
2 tablespoons sun flower seeds
1/4 cup raisins
1 teaspoon vanilla powder
1 tablespoon masala chai spice
1 flax egg (1tbsp flax meal to 3 tbsp water and allow to sit for a few minutes)
125 g vegan butter, melted
To make you own masala spice mix
80 g black pepper powder
65 g ginger powder
50 g cinnamon powder
25 g cardamom powder
5 g star anise powder
5 g clove powder
5 g nutmeg powder
Mix together and store in a glass airtight jar.

Preheat oven to 160C fan forced.
Line a cookie tray with baking paper. Mix dry ingredients in a bowl. add the butter and the flax egg. and mix well.
Scoop out tablespoonfuls and shape into nice rounds using the palms of your hands. Bake for about 20 minutes or until golden.
