Oatmeal and Pumpkin Seed Cookies
If you are looking for a simple and healthier than most cookie treat, these are not bad at all. This is my staple cookie recipe as I love the subtle peanut taste and the crunch when you bite into them.
makes about 20 cookies
what you need
200 g butter (I used Nuttelex)
¼ cup Mayvers chunky peanut butter
1 cup coconut sugar
1 chia egg
1 teaspoon vanilla powder
1½ cups gluten free flour
1 teaspoon baking powder
2 cups rolled oats
1/2 cup pumpkin seeds
1/2 cup sesame seeds

1 cup dark chocolate, melted
what to do
Preheat oven to 180C.
Beat butter and peanut butter together in a stand mixer. Then add the chia egg and coconut sugar.
Sift in flour and baking powder. Add rolled oats, pumpkin seeds and sesame seeds and mix to combine.
Shape the dough into even sized rounds of about 2 tablespoons and place on an oven tray lined with baking paper. Press tops of biscuits with a fork.
Bake for 10 to 12 minutes or until nicely golden. Cool on a wire cake rack.
