Raw Peppermint Brownies
I love brownies, and this raw version is the one I make most often. I love the flavour and gooey consistency of these brownies, and love the fact they are actually healthy. And because they have peppermint oil in them, they also make for a great after dinner treat.

what you need
2 cups walnuts
2 1/2 cups medjool dates, pitted
1 cup raw cacao
1/2 cup almonds
1 teaspoon vanilla powder
4 drops culinary peppermint oil (I use doTERRA oil)
Pinch of salt
1 cup of unsalted pistachios and extra drop of peppermint oil
what to do
To make the crumble place the pistachios and peppermint oil in a small processor and buzz until a nice crumble consistent forms.
Place walnuts in a food processor and blend until finely ground. Add the cacao, vanilla, salt and pulse. While the machine is running, add the dates one at a time and blend until the mixture presses together. Then add three drops of the peppermint oil and pulse to combine. Add the almonds and pulse a few times until they are roughly chopped.
Press into a lined brownie tray and cover with the pistachio and mint crumble. Place in the fridge and allow to harden for a few hours or overnight. Store in an airtight container.
