Pickled Radishes
Pickled radishes are beautiful to look at and make a great substitute anywhere you might otherwise use pickled cucumbers. I love adding some to salads and love them to add a bit of interest to burgers.
makes 1 large jar
What you need
A large bunch of raddishes
1 cup apple cider vinegar
1 cup water
150 g caster sugar
1 teaspoon salt
2 teaspoons of pickling spice
what to do
Thinly slice the radishes using a mandolin or a very sharp knife and place into a large glass jar.
Place all the pickling ingredients into a saucepan and bring to the boil. Then reduce heat and simmer for 2 minutes, stirring until all the sugar has dissolved.
Allow the solution to cool. Then pour over the radishes in the jar and seal with a lid.
Keeps well in the fridge for a month.
