Garlic Roasted Sourdough with Pico De Gallo
Super simple lunch option, or side dish that only takes 15 minutes to whip up.
serves 4 - 6
What you need
For the Bread
A good sourdough
Olive oil
Couple of garlic cloves
Sea salt
For the Pico de Gallo
1 cup of finely chopped Spanish onion
1 jalapeño pepper, seeded and finely chopped
2 limes, juiced
2 1/2 cups of ripe tomatoes
1 small bunch of fresh coriander
1 tsp sea salt flakes
What to do
for the sourdough
Pre-heat oven to 180C.
To make the roasted sourdough, slice your bread about 1cm thick and rub with garlic and olive oil. Sprinkle with a bit of sea salt and bake for about 15 minutes, or until golden brown. Spoon the pico de gallo over the bread and enjoy!
for the pico de Gallo
Combine the onions, tomatoes and pepper in a bowl with the lime juice. Allow to stand for 5 minutes, then add the coriander and salt and allow to rest for 15 minutes for the flavours to fully blend together before serving.
