Mushroom, Garlic and Thyme Toasties
This is my go to guilty pleasure. There's not much better than the combination of mushrooms, garlic and thyme. Especially when you put it on top of some really good sourdough and top it with cheese and then melt it under the grill. I'm drooling!
makes 2 toasties
What you need
2 slices of good sourdough
10 button or brown mushrooms, sliced
1 tablespoon olive oil
1 clove garlic, finely grated
few sprigs fresh thyme, leaves removed
cheese of your choice (I used Damona smoked mozzarella)
salt and peper to taste
What to do
Heat the oil in a pan and then add the mushrooms and cook until browned. Then add salt and pepper to taste and stir through the garlic and thyme.
Arrange on top of your sourdough and then add as much cheese as you like and grill until the cheese is bubbling.
Enjoy right away.
