Almond Milk

Almond Milk

I hate store bought almond milk, but the homemade variety is delicious. It's creamy and smooth and just plain good. I make this once or twice a week for all my milky needs.

Makes 1 litre

What you need

1 cup of raw almonds, soaked overnight

1 tablespoon maple syrup

1/4 teaspoon vanilla powder

1/4 teaspoon cinnamon powder

Pinch of sea salt

what to do

To soak the almonds, place the nuts in a glass bowl cover with filtered water and cover the bowl with a breathable tea towel. Allow to soak at room temperature overnight.

Drain and rinse the almonds several times to remove the scum.

Place the rinsed almonds, water, maple, vanilla, cinnamon and salt in your blender, and blast on high for 30 to 60 seconds, until the nuts are completely pulverised.

You can drink the milk as is, or strain it for a smooth milk.

To strain, place a nut milk bad or some muslin cloth over the opening of a glass bowl, Pour the milk into the bag, twisting the bag closed, and gently squeezing it to pass the liquid through.

Store the milk in a sterilised glass bottle in the fridge. The milk will keep for up to 5 days.
