Hanna-Tädin Piparkakkut - Finnish Butter Cookies
Admiring the golden rays streaming through the curtains, I was reminded of the colour of just baked Hanna-tädin (Aunt Hanna) cookies, and decided they would make a lovely afternoon snack with some freshly made coffee.

what you need
200 g butter
200 ml cream
300 ml sugar
1 1/2 teaspoons baking powder
2 1/4 cups flour
300 ml potato flour
1/4 teaspoon cardamom powder
Nuts and sesame seeds for decoration (you can use any nuts you have in the pantry)
what to do
Pre-heat oven to 200C.
Melt the butter in a pan over low heat.
Take off the heat and allow it to cool for a minute then stir in the cream and sugar. Sift the flour into the butter and cream mixture and mix well.
To shape, roll out about 2 teaspoonfuls of the dough between the palms of your hands into balls about 2cm in diameter and place on a tray lined with baking paper.
Bake for about 10 minutes of until they are slightly golden. Remove from oven and allow to cool on a cooling rack.
tips
Cookies will keep well at room temperature in an airtight containers. You can also freeze them.
