Spicy Pumpkin and Apple Muffins
Nothing beats a spring picnic, and these fluffy and lightly spiced muffins are the perfect thing to bring along.

3 cups self raising flour, sifted
1/2 cup brown sugar
100 g butter, melted
300 g greek yogurt
1/4 cup of milk
2 eggs
1 cup pureed pumpkin
2 generous tablespoons apple puree
1 grated apple
1 tablespoon cinnamon
Icing sugar for dusting
what to do
Preheat oven to 180C.
In a large bowl, combine the melted butter, yogurt, milk, eggs, pumpkin and apple purees and grated apple. Stir until well combined.
Add the flour, sugar and cinnamon and fold gently until combined. Don’t overwork or you will end up with stiff muffins.
Divide batter between about 16 muffin moulds lined with muffin cases, and bake for about 25 minutes, or until golden on top.
Remove from oven and place on a wire rack to cool. Dust with icing sugar to serve
