Chocolate, Oat and Vanilla Cookies
These cookies are not too crunchy and not too chewy, just the way I like them. They are also not overly sweet and made with whole wheat flour, coconut flour and rolled oats, giving them a nice flavour and texture. I find these are the perfect cookies to snack on when working or when you need a mid afternoon pick-me-up.
makes about 20 cookies
what you need
1 cup wholemeal four
1 cup rolled oats
1/2 cup coconut flour
2 teaspoons baking powder
2 tablespoons raw cacao
1 teaspoon sea salt
1/2 cup crunchy peanut butter
1/2 cup vegan butter (I used Nuttelex)
1/2 cup brown sugar
1 teaspoon vanilla powder
1 teaspoon cinnamon
2 teaspoons mixed spice
1 flax egg
100g dark chocolate, cut up into chunks
what to do
Preheat the oven to 180°C.
Cream together the butter, peanut butter and sugar until light and fluffy.
Add the flax egg and vanilla powder and combine well.
Sift the flours together and along with the baking powder, salt and spices and chocolate chunks.
Fold the wet mixture into the dry until well combined. The mixture will be quite stiff and dry dough, but it should just stick together when rolled into a ball.
Using your hands shape little rounds and then flatten them in you palms before transferring to a cookie tray like with baking paper.
Bake for 10 minutes and then transfer to a baking tray to cool. Store in an airtight container.
tips
If you prefer your cookies a bit sweeter you could add another half cup of sugar. If the dough becomes too dry, just add a bit more peanut butter too the mix until you get the right consistency.
