Simple Spelt Cinnamon Scrolls

These scrolls present the ultimate in quick comfort baking for me and what I always turn to when I feel like a cosy winter treat.

what you need

2 cups spelt flour

4 teaspoons baking powder

2 tablespoons caster sugar

60g cold butter or Nuttelex

1/4 teaspoon sea salt

1 1/4 cups of milk (of your choice)

For the filling

60g melted butter or Nuttelex

1/2 cup of brown sugar

2 teaspoons cinnamon

for the icing

2 cups of icing sugar

2 tablespoons water

1 teaspoon vanilla extract


what to do

Preheat the oven to 180°C and line a baking tray with baking paper.

Make the filling by combining the butter, sugar and cinnamon in small bowl. Set aside.

Sift the spelt flour, baking powder, salt and sugar into a large bowl. Using your fingertips, rub through the butter and then pour in the milk. Using a butter knife stir the mixture until it just comes together.

Turn the mixture onto a floured surface and flatten with your hands into a rough rectangle. Then roll into a rectangle of about 20 x 30cm and spread the filling evenly over the dough. Roll up the dough and then cut into 6-10 even sized portions.

Place the scrolls on the baking tray so they just touch and bake in the oven for about 20 minutes. Remove and allow them to cool for 5 minutes before icing.

Combine icing sugar, water and vanilla extract and drizzle over the scrolls.

Store in an airtight container. They will keep well for a day or two, if they last that long.
