Pumpkin and Sage Muffins for Halloween
This is a really simple and tasty muffin recipe to make during the lead up to Halloween. They are sweet, but not too sweet, and a hint of sage gives the muffins a bit of something extra. They are a perfect afternoon treat with a cup of tea.
makes 12 small muffins
what you need
1 1/2 cups self-raising flour
2 tsp pumpkin spice
1/2 teaspoon of ground ginger
1/2 teaspoon ground sage
1/4 cup raw sugar
1/4 cup brown sugar
200g pumpkin purée
2 large eggs
125ml olive, vegetable oil or melted butter
1/4 cup pepitas to sprinkle on top
what to do
Heat the oven to 200C/180C fan/gas 6.
Line a 12-hole muffin tin with muffin papers. Mix the flour, spices and sugars together in a large bowl, making sure to break up any large clumps of sugar.
Whisk the purée and eggs together in a jug, then add to the dry ingredients with the oil. Whisk for 1-2 mins with an electric hand whisk until just combined. Spoon evenly into muffins cups and sprinkle the pumpkin seeds on top.
Bake for 15 mins until golden and risen and a skewer inserted comes out clean. Lift onto a wire rack to cool. These little guys will keep for about three days in an airtight container if you can manage not to eat them before that.
