Pumpkin Pie Porridge

It’s finally Autumn again and really love this time of year because of the cosy breakfasts you can have. This is my favourite thing to eat right now. Its subtle pumpkin pie flavour is so delicious and it’s so comforting on a cool morning, especially with a strong cup of tea or coffee. I usually have mine with frozen berries, because I like the contrast against the warm porridge, with a bit of maple syrup drizzled over the top. I also like the golden hue of the porridge.

serves 2 (or one if you’re really hungry)

 

what you need

1 cup of rolled oats

1 cup of water

1 cup of coconut milk

3/4 cup pumpkin puree

1 tablespoon maple syrup

1 teaspoon pumpkin pie spice

topping

Any berries, fruits or nuts you prefer and a drizzle more maple syrup.


What to do

Place all the ingredients in a saucepan and cook in medium heat for about 10 minutes, or until the porridge is really nice and creamy. Add any toppings you like.

I usually prepare everything the night before and pop it in the fridge. This way, the oats become really creamy and it doesn’t take long at all to have a lovely, nutritious breakfast.
