Simple Gluten Free Pancakes
My go-to gluten free pancakes recipe for lazy weekends.
Serves 4
what you need
for the pancakes
1 1/2 cups self raising gluten free flour
1/2 cup buckwheat flour
1 cup water
1 cup milk
1 teaspoon apple cider vinegar
1 teaspoon sea salt
2 tablespoons coconut sugar
2 teaspoons baking powder
1 teaspoon vanilla powder
For the chocolate sauce
1/4 cup of coconut oil, melted
1/2 cup of maple syrup
1/3 raw cacao powder
splash of water
What to do
for the pancakes
Place all ingredients in a blender and blend until nice and smooth. Then cook on low-medium heat until cooked through. They take about 4 minutes to cook on each side if you make thick ones like I have here. I used a silicon ring to make them all uniform.
for the chocolate sauce
Combine the coconut oil, water and maple syrup in a small saucepan. Stir and bring to a very gentle simmer.
Slowly whisk in the cocoa powder and continue to cook on a low simmer for about 3 minutes. Remove from heat.
Let cool and store in an airtight container in the fridge for a week.
Enjoy with berries!
tips
These are very easy to reheat as you can just pop them in the toaster if you make thick one like this, as they hold their shape very well.
