Gluten Free Banana Pancakes

A great way to use up very ripe bananas, as they add sweetness and flavour. These pancakes are light and fluffy and won't leave you feeling heavy after eating them.

Serves 4

 

what you need

1 cup rolled oats

1/2 cup gluten free flour

2 teaspoons baking powder

1 tablespoon chia seeds

2 ripe bananas

1 cup of almond milk

1 teaspoon vanilla powder

Pinch of salt


What to do

Place the oats in a food processor and buzz until a flour forms. Then add the rest of the ingredients and pulse a few times until well combined.

Scoop out 1/4 cups and pour the batter onto a heavy based frypan on medium heat, and cook for a few minutes on each side until nice and brown. Serve with your favourite toppings and enjoy!
