Sunday Waffles with Berries
If you’ve got a Sunday coming up that requires endless energy or none at all, make a batch of these waffles because, quite frankly, they suit any occasion. And they are super fun to make!
Serves 4
what you need
For the waffles:
1 3/4 - 2 cups almond milk
1 teaspoon apple cider vinegar
1/4 cup coconut oil, melted
1/4 cup maple syrup
1/2 cup gluten free rolled oats
1 cup of gluten free flour
1/2 cup of corn meal
1/4 cup potato flour
1 1/2 teaspoons baking powder
1 teaspoon vanilla powder
pinch sea salt
For the toppings:
Strawberries
Raspberries
Shaved coconut
For the chocolate sauce:
4 tablespoons coconut oil
3 tablespoons raw cacao
3 tablespoons maple syrup
What to do
For the batter
Combine the milk and apple cider vinegar and let sit for 5 minutes to thicken. Then put everything into a blender and pulse to combine.
Make your waffles according to the instructions issued by your waffle manufacturer, using about 1/2 cup of batter and spreading it out evenly. Repeat until all your batter is used up.
For the chocolate sauce
Place everything into a small saucepan and bring to the boil, stirring every now and then. Then take off the heat and allow to cool.
NOTE
If not eating right away, keep your waffles crispy buy placing them on a cooling rack and put them in a very low oven, about 100C, until ready to serve.
