Pumpkin, Chickpea and Turmeric Stew
For those days when only a big bowl of life affirming stew will do the trick, this recipe has got you covered.
serves 4
What you need
2 brown onions, roughly chopped
1 clove garlic, finely diced
1 kg pumpkin, cubed
1 medium sweet potato, cubed
2 cans chickpeas, drained and rinsed
1 litre vegetable stock
1 heaped tablespoon turmeric
1 tablespoon curry powder
Salt and pepper to taste
Fresh coriander, lemon and pepitas to serve
What to do
Saute onions in some coconut oil. When translucent and garlic and give it a quick stir.
Add stock. Then add pumpkin and sweet potato and allow to cook through. Add chickpeas and allow to heat through before serving.
Add toppings and enjoy.
