Pumpkin Juice Inspired by Harry Potter
Like for so many, the world of Harry Potter holds so much magic, and one of the most wonderful things about the books are the descriptions of all the foods and drinks. I fell in love with the idea of pumpkin juice the very first time I read about it, and this is my version.
makes about 1.5 litres
what you need
600 g butternut pumpkin, peeled and roughly chopped
2 cups water
1 litre cloudy apple juice
1 cup apricot nectar
1 tablespoon pumpkin pie spice (recipe here)
1 teaspoon vanilla powder
1/2 teaspoon freshly grated nutmeg
2 juniper berries
1/4 cup coconut sugar (optional)
what to do
Preheat oven to 180C.
Bake the pumpkin in the oven for 30 minutes, or until it is caramelised. Let it cool and then buzz it up with water in a high powered blender until completely smooth.
In a large pot, or cauldron, add 2 cups pumpkin juice, apple juice, apricot nectar, pumpkin pie spice, juniper berries, vanilla powder and the coconut sugar if using.
Bring the mixture to the boil. Then reduce the heat and let it simmer for 30 minutes so the spices permeate the juice. Strain the juice and allow to chill.
Serve with whipped coconut cream and a bit of cinnamon and grab your most loved Harry Potter book and get cosy.
tips
It's really easy to tweak to your taste. You might not have to even add any sugar if you are not much of a sweet tooth.
