Pumpkin Spice Latte
Normally pumpkin spice lattes actually have coffee in them, but since I don't drink much coffee, I have made one without the caffeine. I think it's just as yummy!
serves 1
what you need
2 tablespoons pumpkin puree
1 teaspoon pumpkin pie spice, plus more to garnish
1 tablespoon coconut sugar
1 teaspoon vanilla powder
1 cup of soy milk + extra for frothing

what to do
Heat the pumpkin, pumpkin pie spice and coconut sugar in a small saucepan over medium heat, stirring constantly, until it's hot and bubbling.
Then add the milk and vanilla and heat to just before boiling, whisking all the time.
Pour into high powered blender and blend until frothy.
for the froth
Place 1/4 cup of soy milk int a milk frother and heat.
to serve
Pour pumpkin mixture into a mug and top with frothed milk and a sprinkle with cinnamon.
