Rosemary, Cardamom and Ginger Lemonade
Spring time calls for a refreshing spring time tonic, like this rosemary, cardamom and ginger lemonade. It's great on a balmy night when a BBQ is in order.
serves 4
what you need
For the Syrup
1 1/2 cups water
1 cup sugar
1 to 2 large sprigs rosemary
For the Lemonade
6 tart lemons
5 cups soda water
Lemon slices
Rosemary sprigs
Fresh mint springs
what to do
for the syrup
Bring the water, sugar, and rosemary to a slow boil for several minutes in a small saucepan. Stir until the sugar is dissolved, then turn off the heat, cover with a lid, and let the rosemary steep for at least 30 minutes.
for the lemonade
Squeeze the juice out of the lemons so you have about 1 cup of juice.
When your syrup has infused, remove the rosemary sprigs, then stir the syrup and lemon juice together in a pitcher. Add water and mix well. Taste the lemonade and adjust as needed.
To serve, add ice, drop in a few slices of lemon, some mints and a few sprigs of rosemary, and enjoy!
