Sweet Potato Ice Cream

This might sound strange, but it makes a delightful combination. It makes for a delicious dessert in the summer months and the spiciness is unexpected and gives a nice warmth to the cool ice cream. And it’s dairy free, so perfect for anyone who is lactose intolerant or follows a dairy free diet.

Serves 2-4

 

what you need

1 large sweet potato, which has been peeled, streamed, chopped and frozen

1 frozen banana

3 medjool dates

1 tablespoon chai spice (recipe here)


what to do

Place everything into the jug of a high powered blender and blend until smooth.

Eat straight away or pour the contents into an ice cream tub and store in the freezer until you are ready to eat. Allow to sit for a few minutes to thaw before serving.

Enjoy alone or topped with berries and nuts.
