Goji Berry Fudge
This is a lovely dessert to make on any occasion, but it is very fitting for Valentine’s Day end of meal treat. It’s filled with goodness too, so you can feel extra good about eating it. The recipe is super simple and you don’t even have to cook it, so this is a winner for me!
Serves 2-4
what you need
1 cup of almonds (or any nuts you have in the pantry)
300g medjool dates
1/2 cup raw cacao
1/4 cup buckinis
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1/2 cup of plain and chocolate covered goji berries
what to do
Place the nuts in a high powered food processor and blend until finely ground. Add the cacao, salt and vanilla extract. Pulse to combine.
While the processor is running, add the dates one and a time through the feed tube.
In a bowl, combine the mixture with the buck inis and mix to combine. Press into a heart shaped mould and press the goji berries into the top.
Place in the fridge until you are ready to serve. Store in an airtight container in the fridge.
